Ok, let me just start by pointing something out. Something very important. This salad is stinkin’ AMAZING. I plan to make it once a week or so. The crispy garbanzo bean “croutons” do add a fun, special touch… but they do take some time. I’ve seen other recipes for these crispy garbanzo beans. They are baked in the oven, and seasoned with paprika (or whatever  you like)… and apparently they make a wonderful snack. I’ll have to try those out… you know, as a healthier alternative to the Lays Dill Pickle Chips that I am absolutely OBSESSED with. 

Like I said before, the garbanzo croutons are the most labor-intensive part. Mine turned out fairly well, but I think I should’ve seasoned them a bit more. Perhaps they are one those things that take a bit of practice/experience…? 

So, what you do is, rinse the beans in a strainer, and lay them out to dry. Once they dry a decent time/mostly… you rub each one between your fingers to remove the thin layer of “skin”. I’m not sure why you have to do this… or if it’s necessary, but it says to in the recipe, so I did it. What do you think? Do you know if it’s important to take off that “skin”??

Toss them in olive oil and season them with salt and pepper (feel free to experiment here with seasonings!!). Then, you just bake them in the oven until they are nice and crispy!

Just go ahead and throw your salad together… the kale and dressing, then top with extra Parmesan and the garbanzo beans!

Dressing
  1. 1 garlic clove
  2. 1/2 cup mayonnaise (I have yet to try this myself, but I wonder if Greek Yogurt could be used as a substitute)
  3. 1 tsp dijon mustard
  4. 3 Tbsp lemon juice
  5. 1 tsp worcestershire sauce
  6. 1/4 cup parmesan cheese, grated
  7. 3 to 4 Tbsp olive oil
  8. 1 to 2 tsp of water (if needed to thin)
  9. salt and pepper (to taste)
Garbanzo Beans
  1. 1 (15oz) can garbanzo beans
  2. 1 1/2 tsp olive oil
  3. salt and pepper (to taste)
Salad
  1. 1 head kale (I used the organic baby spinach from Costco and just "eye-balled" it)
  2. 1/2 cup parmesan cheese, grated
  3. dressing
  4. crispy garbanzo beans
Crispy Garbanzo Beans
  1. Rinse and drain the garbanzo beans, then lay them out on the counter to dry.
  2. Remove the thin layer of "skin" around each bean.
  3. Toss beans with olive oil, salt, and pepper, then lay beans out on a baking sheet and bake at 375 degrees F for 40 mins or until they are brown and nice and crispy.
Dressing
  1. Blend together all of the ingredients except for oil, salt, and pepper.
  2. While blending, slowly pour in the olive oil. Feel free to add in some of the water if it is too thick.
  3. Season with salt and pepper according to taste.
Salad
  1. Wash kale and remove the stems. Then toss it into a big bowl.
  2. Add the dressing and the parmesan to the salad and toss to mix.
  3. Top with garbanzo beans and more cheese!
