These are adorable and totally scrump (any Seinfeld fans out there??)! This recipe does involve the cupcake batter, a filling, and a frosting… and while that seems a bit tedious for cupcakes, I promise that it’s worth it! And, it’s really not so bad once you get started. ;)

I love the delicate pink shade of the raspberry frosting! I think it’s cute to decorate these with mini marshmallows (they go with the whole hot chocolate theme) and chocolate sprinkles. Who doesn’t love sprinkles?? Oh, and you know who especially loves them? My sweet niece! She helped me bake these, and is also the reason for the addition of the hot pink sprinkles on these cupcakes.

Hot Chocolate Raspberry Cupcakes

For the Cupcakes
  1. devil's food cake box mix
  2. 3 eggs
  3. 1/2 cup oil
  4. 3/4 cup buttermilk
  5. 1 cup sour cream
  6. 1 tsp vanilla extract
  7. 1/2 tsp cinnamon
For the Filling
  1. 1/2 cup marshmallow cream
  2. 1/4 cup raspberries, strained (or you can use raspberry preserves)
  3. 1 cup powdered sugar
For the Frosting
  1. 1 pint heavy whipping cream
  2. 2-3 tsp raspberry gelatin
  3. 1 cup powdered sugar
For the Cupcakes
  1. Preheat oven to 350 degrees F. Place cupcake liners in muffin pan or spray it with pam if you don't want to use liners.
  2. In a large bowl, combine all cake ingredients- adding the cake mix in last.
  3. Fill cupcake liners 3/4 full and bake 17-20 minutes, or until a toothpick inserted in the center comes out clean.
  4. Once cooled, cut a hole into each cupcake and fill with the filling. Doesn't have to be perfect or cute, the frosting will cover it.
  5. Then pipe, or dollop frosting on top of each cupcake and decorate to your heart's content!
  6. ENJOY!
For the Filling
  1. Combine all ingredients and set aside.
For the Frosting
  1. Beat the heaving whipping cream until stiff peaks form.
  2. Now, stir in the gelatin and powdered sugar until desired flavor is reached.
