Breakfast Idea: Protein Pancakes with Blueberries

I LOVE me some breakfast food! I can happily eat breakfast all day, any day, every day! Oh, and I’m especially a sucker for unhealthy choices (ha!)… for example: cinnamon/caramel rolls, pancakes, eggs benedict, stuffed french toast… etc, etc, etc.  Here is a yummy breakfast that IS healthy, and you really could have it any time of the day. Ok, so I admit it, it’s no caramel roll… but I promise you’ll feel much better about yourself if you have a protein pancake instead. ;) 

Breakfast Idea: Protein Pancakes with Blueberries

I like to double the recipe, and have a pancake again the next morning as well. This saves me precious time. ;)      

Tone It Up Protein Pancake Recipe:

Ingredients

  • 1 scoop protein powder
  • 1/2 banana (you can substitute apple sauce in place of the banana, if you like)
  • 1/4 cup egg whites
  • 1 Tbsp. almond milk
  • 1 tsp. cinnamon

Directions

  • mash the banana with the almond milk, then combine remaining ingredients
  • just cook your pancake as normal
  • top with berries and a bit of pure maple syrup… or peanut butter :)

(If you feel like being crazy, sub chocolate chips for the blueberries!)
