Avocado Spice Cupcakes with Avocado Cream Cheese Frosting

Ingredients
  1. 1 cup sugar
  2. 1/2 cup butter
  3. 1 cup avocado, mashed
  4. 2 eggs
  5. 1/2 cup buttermilk**
  6. 1 1/2 cup flour
  7. 1/2 tsp nutmeg
  8. 1/2 tsp cinnamon
  9. 1/2 tsp allspice
  10. 1 tsp baking soda
For the Frosting
  1. 4 oz cream cheese
  2. 1/4 cup butter
  3. 3 Tbsp avocado, mashed/pureed
  4. 1 1/2 cup powdered sugar
  5. 2 tsp sour cream
  6. 1/4 tsp vanilla
Instructions
  1. Cream together sugar and butter. Add avocado and eggs and beat to incorporate. Then, mix in the buttermilk.
  2. Mix together the flour, spices, and baking soda. Add them to the batter and mix well.
  3. Pour batter into mini muffin pans and bake at 350 degrees F (preheated!) until golden. About 15-18 minutes.
For the Frosting
  1. Beat together cream cheese and butter until fluffy. Add in avocado. Then, beat in the powdered sugar, sour cream and vanilla. Refrigerate.
  2. After your cupcakes have cooled, frost 'em! Then, see how many mini ones you can fit in your mouth at a time! YUM.
Notes
  1. *This makes 50 mini cupcakes... obviously, it makes less if you make regular sized cupcakes. :)

**Don’t have buttermilk on hand? You can make it! For 1 cup of milk (any kind works… regular, almond, soy, etc.) add 1 Tbsp of lemon juice or white vinegar. Let set a few minutes, and there ya have it! I use this tip ALL the time!
